He told me that he himself is a meat-eater, but that the great thing about The Grit is that it provides those with dietary restrictions the foods they need, but also can satisfy those who aren’t as restricted and just looking to try new kinds of foods. He told me that at The Grit, there’s a solid mix of both meat eaters and non-meaters, as well as those who practice veganism/vegetarianism for ethical reasons vs. I first asked him about the company’s culture, including both employees and customers, regarding their dietary practices and thoughts on veganism/vegetarianism. He told me he had been serving at The Grit for about six years. I spoke with the server behind the bar, a middle-aged man named Chris Goldberg. Based on this interview, I was able to bounce off of some of his ideas to formulate questions to pose during my visit to his business. When I first parked and approached The Grit, I first noticed the large, outdoor seating area closing off the portion of the road between The Grit and its neighboring restaurant, Taziki’s.
